BOTTLE GOURD (LAUKI) KHEER

Ingredients
  • ½ kg grated Bottle gourd
  • 1 cup Sugar or to taste
  • 1kg Milk
  • ½ tsp Cardamom powder
  • 2tbsp mixed dry fruits (Pistachios, Cashews, Almonds, Raisins)
Recipe Method
  • Wash fresh Bottle gourd (Lauki) and taste a slice of Bottle gourd to ensure it is not bitter. Then peel and grate it.
  • Combine the bottle gourd and milk in a non-stick pan / heavy bottom pan and simmer for 10 to 15 minutes till the bottle gourd is fully cooked.
  • Add the sugar and cook till the sugar dissolves and the milk thickens.
  • Add the cardamom powder and dry fruits mix well and refrigerate. Serve chilled.
  • You can add ½ cups Condensed Milk or Milk Solid (Khoya) to make Kheer creamy and very rich, in this case reduce sugar.

POTATO (ALOO) KHEER

Ingredients
  • 250 gm grated Potatoes
  • 1 cup Sugar or to taste
  • 1 ½ litre Milk
  • ½ tsp Cardamom powder
  • 2tbsp mixed dry fruits (Pistachios, Cashews, Almonds, Raisins)
Recipe Method
  • Combine the grated Potatoes and milk in a non-stick pan / heavy bottom pan and simmer for 10 to 15 minutes till the Potatoes is fully cooked.
  • Add the sugar and cook till the sugar dissolves and the milk thickens.
  • Add the cardamom powder and dry fruits mix well and refrigerate. Serve chilled.

SAGO (SABUDANA) KHEER

Ingredients
  • ½ cup Sago
  • 4-5 tbls Sugar or to taste
  • 3 cups Milk
  • ½ tsp Cardamom powder
  • 2tbsp mixed dry fruits (Pistachios, Cashews, Almonds, Raisins)
Recipe Method
  • Put the milk, into a non-stick pan / heavy bottom pan, and bring to the boil. Add the sago (Sabudana) and return to the boil. Simmer, stirring, until the sago is fully cooked.
  • Add the sugar and cook till the sugar dissolves and the milk thickens.
  • Add the cardamom powder and dry fruits mix well and refrigerate. Serve chilled.
  • You can add ½ cup Condensed Milk or Milk Solid (Khoya) to make Kheer creamy and very rich, in this case reduce sugar.

PUMPKIN (MITHA KADDU) KHEER

Ingredients
  • 250 gm/1 cup Pumpkin (Red or Yellow)
  • 1 liter Milk
  • ½ cup Sugar or to taste
  • 2 tbsp Ghee
  • ½ tsp Cardamom powder
  • 2 tbsp mixed dry fruits (Pistachios, Cashews, Almonds, Raisins)
Recipe Method
  • In a non-stick pan / heavy bottom pan add grated Pumpkin and Ghee until Pumpkin is fully cooked.
  • Add milk and sugar and cook till the sugar dissolves and the milk thickens.
  • Add the cardamom powder and dry fruits mix well and refrigerate. Serve chilled.
  • You can add ½ cup Condensed Milk or Milk Solid (Khoya) to make Kheer creamy and very rich, in this case reduce sugar.
